The summer heat is on! Which means we’re all searching for the ultimate refreshing summer drink and cool getaway. When hosting a summer soiree, I love making a batch of poptails to help cool, hydrate, and yes booze up guests. I always find margaritas and coconut water to be extra hydrating on hot days, so I decided to pull together some of my favorite ingredients to create a poptail. It’s not too sweet and has a perfect flavor balance of key lime, raspberry, and coconut.

This past Memorial Day weekend, I was introduced to Captain Morgan Grapefruit Rum. At first, I wasn’t really excited about working with the product as I am not the biggest fan of flavored liquor. In all honesty, I will always choose pure rum but was extremely impressed by the quality and subtle flavor of the grapefruit in this bottle Captain Morgan. Most people would think that the flavor would over power the rum but it was so subtle I decided to add ruby red grapefruit juice to draw out the citrus even more.

Ketel One Vodka recently sent me a cocktail grilling set that I used to make a coconut and jalapeno vodka slushy. This boozy slushy was a mix of grilled jalapeno and grilled coconut. The grilled coconut gave this cocktail the perfect hint of sweetness while the jalapeno added a flavorful spiciness. Margarita mixes are nice for a quick cocktail - you just chill and serve over ice, or maybe blend with ice for a frozen cocktail. Add a garnish, and you're done. But you can also use a pre-made margarita as an ingredient in your own cocktails. Here, I added citrus to a strawberry mix. Strawberry-Orange Margarita Equal parts of: Sandra Lee Cocktail Time Strawberry Margarita Orange juice Plus: Dash of orange bitters Add ice to your glass. Add the margarita and orange juice, then add the dash of bitters. Stir and serve. If you like, garnish with some fruit - lime would be nice, or a slice of orange or a whole strawberry.
